  • 1kg potatoes
  • 300g onion
  • 2 cloves of garlic
  • 200g artichoke hearts
  • 350g tomatoes
  • 600g Cocovite scrambled egg mix
  • 6 cl milk or cream
  • 4 spring onions
  • 4 tbsp. olive oil
  • salt and pepper


Peel the potatoes and cut into thick slices. Bake the potato slices in the oven in a little olive oil for 10 minutes at 180°C. Dice the artichoke hearts and tomatoes. Chop the onion and fry until golden together with the chopped garlic in a little olive oil. Remove the potatoes from the oven and mix together with the vegetables. Pour the Cocovite scrambled egg mix on top and season with salt and pepper. Pour the whole mixture into a frying pan. Fry for a few minutes on a high heat. Place in the oven and bake for another 20 minutes at 180°C.
